This easy-to-prep Mediterranean-inspired salad is full of flavor, and makes for a nutrient-packed meal.
Ingredients: (serves 2)
2 chicken breasts, cut into strips
2 tbsp olive oil
2 tbsp Lin's Farm Pure Date Honey
1 bag of spinach leaves
1 tbsp lemon juice
1 tsp fresh grated ginger
1/2 tsp salt
1/2 cup walnuts, coarsely crushed
1 cup pomegranate seeds
In a large pan, heat the olive oil. Add the chicken strips and date honey, and cook until tender. Set aside to cool.
In a large salad bowl, combine the spinach, lemon juice, salt, grated ginger and walnuts.
Add the chicken strips, and any remaining sauce in the pan. Toss gently.
Top with pomegranate seeds and serve!
