Peanut Curry Vegetable Rice
Bursting with the tantalizing flavors of our very own Honey Peanut Curry Marinade, this rice dish will absolutely delight you!
Note: You can replace any of the vegetable suggestions with your favorite seasonal finds.
Ingredients: (serves 5)
1.5 cups wild or basmati rice (uncooked)
2 onions, peeled and diced
2 carrots, peeled and sliced
2 stalks of celery, peeled and diced
1 head of cabbage, sliced
Tofu (optional)
2 tbsp canola oil
4 tbsp of Lin’s Farm Honey Peanut Curry Marinade
Directions:
Cook the rice according to package instructions.
While the rice is cooking, prepare all the vegetables.
Heat a skillet or wok with the canola oil. Add the vegetables, tofu, and cooked rice, and stir over high heat for 3-5 minutes.
Add Lin’s Farm Honey Peanut Curry Marinade and cook just until the rice absorbs the flavors.
Remove from heat and serve hot.
