Uttapam - Savory Vegan Pancakes
Uttapam is a South Indian breakfast pancake made with a lentil-based batter. Our plant-based egg replacer, Egg Free™, is the perfect base for this recipe!
Though Indians traditionally serve this dish for breakfast, it works just as wonderfully for brunch, lunch, or dinner.
Note: You can add more vegetables to this recipe if you so desire!
1/3 cup Egg Free™
1/3 cup water (or more, if wetter consistency desired)
Coconut oil (or oil of your choice)
1 onion, diced
Fresh herbs (optional)
Combine the Egg Free™ and water in a bowl and mix well.
Heat oil in a pan and sauté the diced onion.
Add the Egg Free™ mixture and fresh herbs if desired.
Cook until bubbles form, then flip, and cook the other side until nicely browned.
Enjoy right away!
